Judge Spotlight: Flavio Saldanha - Brazil

No stranger to the competition, Flavio Saldanha will once again be judging the World Butchers’ Challenge on behalf of Brazil. Flavio is the founder of FS67 - Meat As a Service and has been recognized for his impact in Brazilian butchery. Flavio was awarded the Most Innovative ButcherShop Project for four consecutive years (2010-2014) for his work with PrimeCut Shop in São Paulo. His dedication to innovation and quality has made him a respected figure in the industry.

At the 2025 WBC, Flavio looks forward to seeing competitors’ creativity with displays and preparation techniques, blending regional traditions with modern craftsmanship. In his view, while speed and precision are essential, it’s creativity and the ability to tell a story through presentation that will set the leading teams apart. He recalls the 2022 competition, where a team’s intricate, visually striking display showcased impeccable knife skills—a perfect blend of art and technique that truly impressed him.

As a judge, Flavio is committed to maintaining WBC’s high standards of technical skill, artistry, and hygiene. He believes the competition shapes the future of butchery, inspiring young butchers to embrace both tradition and innovation in their work.

Looking ahead, Flavio envisions a shift toward sustainable, locally sourced practices and greater use of technology to meet evolving consumer demands. For first-time competitors, he advises preparation and a focus on learning from global peers—a rare chance to showcase their craft on the world stage.
